1. Halloumi & Corn Fritters.

I'm an avowed meat eater but I love making (and eating) halloumi burgers.
Just make your regular burger, but instead of a meat patty, take a block of halloumi, slice in half to create 2 patties and soak them in water for a few minutes. Dry them off and either just fry them up as is, or for an even yummier burger, crumb each one with panko bread crumbs before frying (or even double crumb).
They're quick, easy and delicious.
